This is a tradition in New Mexican so of course my family had to send me with some fresh Hatch New Mexico green chilies.

Roasting them is how all the flavor comes out and the smell is amazing! I just love it. I chose to use the grill. You can use the oven or broiler too.

First make sure the chilies are clean a little wash and dry with a paper towel does the trick.

Prepare a glass or plastic bowl and some plastic wrap. You're going to use the bowl in my case to take them to grill and then put them back to be able to steam in the end.

Then these chilies are ready for the grill ( which you should have prepped and got going so it is hot hot hot)

Then start grilling them, and they will start popping and hissing (some people poke holes but I do not, to let them steam better too)

As you see they have started to "bubble" and cook, but the key is too not cook them too long which I think I did. They start to look charred a bit.

Then you put them back in that glass bowl and cover it with plastic

Then you grab gloves and start peeling! Sometimes it is easy, and other times not. Mine came out whole enough to freeze and cut at a later point.

As you see below you just discard the peels.
